Cook: How To Get Creative With Thanksgiving Leftovers

The microwave helps with the leftovers from Turkey Day. But it’s the same with imagination. I’ve developed and tested a couple of recipes that will turn Thanksgiving dinner into a few new dishes in the future.

Hanukkah quickly follows Thanksgiving this year, as it sometimes does, so let’s make a latke using leftover sweet or mashed potatoes.

And for that (inevitable?) Pile of leftover bread filling – and even leftover greens or vegetables – try a Spanish and Mexican recipe for thick bread and garlic soup called sopa de pan y ajo. It’s delicious, very satisfying and warming, perfect for the chilly nights ahead.

Remains and latkes

Depending on the size, 6-8 pieces are obtained.


  • 2 medium to medium peeled potatoes
  • 1/4 cup white or yellow onions, chopped
  • 3/4 cup boiled white or sweet potatoes
  • 1/2 teaspoon kosher or fine sea salt
  • A little chopped white pepper to taste.
  • 1/4 cup matzo
  • 1 large egg, beaten in a small bowl
  • Canola or other neutral cooking oil
  • Sour cream or plain yogurt


After peeling potatoes and before grating them, make sure all potatoes are soaked in cold water. (For example, you can peel them and store them in the refrigerator, covered with water.) When ready, place the cooling rack on a brown paper bag on a baking sheet next to the heat source.

Place the onion, leftover potatoes, salt, pepper, and matzo in the food processor at the ready.

Pat the potatoes dry and grate on a coarse grater. (If they’re especially damp, squeeze out the excess liquid in handfuls.) Continue quickly for the rest of the recipe to prevent the grated potatoes from oxidizing (turning gray or reddish brown).
