The central restaurant, headed by chefs Virgilio Martinez and Pia Leon, is an ode to Peru’s unique landscape, history and traditions, leading the annual vote for the first time since 2016.

The latest three years have brought about significant change in the industry which is reflected in the new restaurants and destinations featured on the 2022 list.”
In top rankingAlong with Central were the Don Julio (number 2) restaurant in Buenos Aires (named best restaurant in Argentina), and the Mado (number 3) in Lima.
Buenos Aires and Lima continue their reign as culinary meccas with eight restaurants on the list each. In addition to Don Julio in place number 2, Other notable additions from the Argentine capital were Julia (No. 50), who appeared for the first time, and Elena (No. 40), who re-entered the list.
São Paulo followed with seven entries, including A Casa do Porco (No. 4), named best restaurant in Brazil, and new entries Metzi (No. 27), Charco (No. 35) and Nelita (No. 39). Huh. , Mexico City had five entries and Pujol (No. 7) was once again named the best restaurant in Mexico.
The diversity of the region was highlighted in this edition with 10 new restaurants entering the rankings for the first time. Empty bottles line the interior walls of the 19th-century building in which Don Julio lives, turning this rustic space into a welcoming wine sanctuary.

Academy of Organization is made up of more 300 regional voting members, whose selections are based on their expert opinion on the restaurant scene in Latin America. It is divided into five regions: Mexico, Central America, South America (North), South America (South) and Brazil. Each one has selected voters among journalists, food critics, chefs, gastronomes and longtime gourmets.
In 2022, each member submitted 10 votes for their best dining experiences from the past 18 months. At least three of those votes had to go to restaurants outside their home country (Academy members unable to travel abroad could only vote for seven restaurants in their home country).
