They are among the most popular desserts when it comes to having something sweet as a snack, since it is a recipe that goes very well with hot drinks such as mate, coffee,, and tea. Plus, there’s a way to make them at home with a a few ingredients, so you can save a few pesos at the market.
You don’t need to be a pastry expert to make this sweet appetizer, nor do you need to mess up a lot of kitchen utensils, as you’ll get rich black pancakes without spending too much time preparing them.
The ingredients for the preparation of Pancakes Negras are:
- 500 g ordinary flour.
- 120 grams of sugar.
- vanilla essence.
- 25 g fresh yeast or 10 g dry yeast.
- 1 cup of warm milk (approximately 220 ml).
- 50 grams of butter
- 1/2 cup brown sugar
First, put the yeast in a bowl with a quarter of the milk and a pinch of salt. Mix until there are no lumps. Cover with cling film and store.
Then place the flour in another container, leaving a space in the center to add 1/2 cup of the sugar and the ferment. Immediately add a splash of vanilla and warm milk and mix until all ingredients are well combined and a dough forms.
If you already have this consistency, add the butter. At this point, the dough may start to fall apart, but you’ll need to keep kneading without adding more flour until it’s fully combined. It is placed in the bowl, covered with plastic wrap, until it doubles in size.
Once it has reached this point, it is placed on a board and stretched to a thickness of approximately 2cm. Using a glass or circle cutter, shape the pancake shapes and place them on a baking sheet.
On the other hand, black sugar is added with a little flour, and the pancakes are varnished with a little water so that they stick. Place them in the oven and let them cook over medium heat for 25 minutes. You can get between 20 and 30 servings with this recipe.
